COHASSET BOARD OF HEALTH MINUTES

9:OOam—Holly Hill Farm Food Permit Request

Holly Hill Farm (HHF) would like a food permit for their farm. Ms. Sarni and the Board met at the farm
with Ms. Prentice on April 12, 2017 and there were requirements that the BoH needs completed before
issuing a permit.This meeting was to talk about the progress made by HHF since then.
HHF bought a dishwasher that is being installed with a sanitizer button.The entire cycle takes 2.46 hours
to run and sanitizes at 168 degrees.
The refrigerator in the farm house will not be allowed to house the farm picked food and other items
sold by HHF. For now the mini refrigerator with a freezer will be used in the farm house. Purchase of a
new refrigerator is not budgeted at this time.
The dog gate is being installed keeping the dogs out of the kitchen.
Ms. Sarni received a permit for the Farm to Table event that is catered by a certified food establishment.
In order for the food truck to be permitted, it needs to be linked to a kitchen for which an application
must be submitted.A variance will not be needed. It will be the BoH's responsibility to document exactly
what is permitted in view that HHF is more than a residential kitchen but not quite a food establishment.
After the kitchen is inspected, a permit can be approved with conditions.The Town of Cohasset permits
three mobile trucks a year, so the HHF mobile food truck will not be moving this year.

The vendors that provide the bread, oats and chocolates that are sold at the farm stand need to be
permitted. Ms. Prentice has requested their certifications and hasn't received them yet.These items
cannot be resold without a permit. Once the certifications and permits are brought in from each town in
which the vendors are located, the BoH will issue a permit.The BoH requires vendors that have food
prepared in a permitted kitchen.
The food stand is open every weekend from May to December. Pickles, spaghetti, sauce, and bread are
sold. HHF buys these items wholesale and sells retail. Until the permits are issued, HHF will store the
sauce, honey, bread and maple syrup in the backroom.
HHF will require a Food Establishment Permit as opposed to a Temporary Permit since the permit will be
honored for longer than 14 days. An additional Mobile Food Permit will also be needed with conditions
and vendors listed. If HHF wants to add vendors,the same process of retrieving their food permits from
the towns they do business in are required.There will not be a fee.
MOTION BY CHAIRMAN LAWRENCE: Until the Board of Health receives permits from the vendors
and Holly Hill Farms is inspected and meets the regulations, HHF will not be able to sell vendors'
products and the permit will written with conditions

• The next steps for Holly Hill Farm are:
• HHF to bring in vendor permits
• Inspect HHF focusing on the dishwasher, sanitization, refrigerator, gate for the dogs
• Permit the Food Establishment
HHF would like to start camps on June 12, 2017.The BoH will not permit the camps until the Food
Permit is finalized.
